Ground Turkey Sweet Potato Skillet

Ingredients
2 Tbsp cooking oil - divided
1 lb ground turkey
2 cups sweet potato - peeled and cut into cubes
3 garlic cloves - minced
½ cup yellow onion - diced
1 tsp onion powder
1 tsp garlic powder
½ tsp chili powder
½ tsp paprika
½ tsp salt
¼ tsp ground black pepper
1 cup shredded mozzarella cheese - optional
Instructions
In a frying pan over medium heat, add 1 Tbsp cooking oil and 2 cups of chopped sweet potatoes. Cook until the cubes are soft when poked with a fork. Scoop into a bowl and set aside for now.
Now add 1 Tbsp olive oil, 3 minced garlic cloves and ½ cup chopped onion. Cook until onion turns translucent. Scoop the onion to the side of the pan.
Now add the 1 lb ground turkey and break it up into small pieces. Cook until ground turkey is no longer pink (about 2-3 minutes).
Next, sprinkle the 1 tsp onion powder, 1 tsp garlic powder, ½ tsp chili powder, ½ tsp paprika, ½ tsp salt and ¼ tsp ground black pepper over top of everything. Mix it all together and cook another 2-3 minutes. Stir the mixture occasionally.
Turn the heat to low and sprinkle the top with mozzarella cheese. Cover the pan with a lid to help the cheese melt. Serve immediately.
