Ground Turkey Sweet Potato Skillet

Ingredients

  • 2 Tbsp cooking oil - divided

  • 1 lb ground turkey

  • 2 cups sweet potato - peeled and cut into cubes

  • 3 garlic cloves - minced

  • ½ cup yellow onion - diced

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • ½ tsp chili powder

  • ½ tsp paprika

  • ½ tsp salt

  • ¼ tsp ground black pepper

  • 1 cup shredded mozzarella cheese - optional


Instructions

  • In a frying pan over medium heat, add 1 Tbsp cooking oil and 2 cups of chopped sweet potatoes. Cook until the cubes are soft when poked with a fork. Scoop into a bowl and set aside for now.

  • Now add 1 Tbsp olive oil, 3 minced garlic cloves and ½ cup chopped onion. Cook until onion turns translucent. Scoop the onion to the side of the pan.

  • Now add the 1 lb ground turkey and break it up into small pieces. Cook until ground turkey is no longer pink (about 2-3 minutes).

  • Next, sprinkle the 1 tsp onion powder, 1 tsp garlic powder, ½ tsp chili powder, ½ tsp paprika, ½ tsp salt and ¼ tsp ground black pepper over top of everything. Mix it all together and cook another 2-3 minutes. Stir the mixture occasionally.

  • Turn the heat to low and sprinkle the top with mozzarella cheese. Cover the pan with a lid to help the cheese melt. Serve immediately.
