Baked Pesto Chicken Recipe

Ingredients

  • 4 boneless skinless chicken breast halves

  • 1/2 cup refrigerated basil pesto

  • 1 cup mozzarella cheese shredded

  • 3 plum tomatoes sliced (optional)


Instructions

  • Preheat oven to 400°F.

  • Line a baking sheet with foil with cooking spray. In a medium bowl, toss chicken with pesto to coat. Place chicken on a baking sheet and bake for 35 minutes or until cooked through.

  • Remove from oven and top with tomatoes and cheese. Bake for an additional 5-7 minutes or until the cheese has melted. Serve warm and ENJOY!


I rarely use a full breast. I buy the chicken tenderloins for faster cooking! I sprinkle my tenderloins with a garlic herb blend of spices, then the pesto. Top with tomato slices (halved, but I put two pieces on them). Then sprinkle with cheese. Bake at 350 for 25-30. We pair these with a baked sweet potato a lot of times.
